I really like it that the 3G S is very friendly to people with disabilities.

That's right. One of the things they have now is the screen reader which would help those who are visually impaired.

What about the Zoom feature... which would make text and images 5 times larger and easier to read or see?

I also applaud them for coming up with a white on black display that would make it easier for the visually impaired to read the text.

You can also use the voice control to lessen the need to read the contacts. You can easily call someone by saying their name or phone number!

Actually, one of the things I've been hesitant about is the size of the phone and being able to see everything. I can't see squat without my glasses, and even with them, sizing is an issue.
